Job Description
- Prepare and execute traditional South Indian dishes using authentic recipes and regional techniques.
- Manage kitchen operations during peak hours, ensuring timely and consistent food delivery.
- Maintain high standards of food safety, hygiene, and cleanliness in compliance with commercial kitchen regulations.
- Supervise and mentor kitchen staff, promoting efficiency, teamwork, and adherence to recipes.
- Source and manage ingredients with attention to freshness, quality, and seasonal availability.
- Ensure consistent plating, portioning, and presentation across all dishes.
- Adapt recipes and techniques as needed to meet evolving menu requirements and guest preferences.
Requirements
- Minimum 2 5 years of hands-on experience in a South Indian or Kerala-style kitchen.

- Expertise in traditional cooking methods including steaming, tempering, roasting, and slow - cooking.
- In - depth knowledge of regional spice blends, coconut-based gravies, tamarind, curry leaves, and other core ingredients.
- Proven experience in preparing both vegetarian and non-vegetarian South Indian dishes.
- Familiarity with commercial kitchen equipment and adherence to food safety standards.
- Ability to multitask effectively during high-pressure service periods while maintaining consistency.
- Basic proficiency in English or Hindi (Malayalam or Tamil is a plus).
